Discovering Olbia’s traditional cuisine

Sardinian cuisine is a perfect blend of innovation, creativity and respect for tradition, so much so that it satisfies both the most discerning and refined palates and lovers of simple, authentic peasant fare.
Being able to rely on the high Thanks to the quality of the raw ingredients – from cheeses to cured meats, from seafood to shellfish – Olbia’s traditional dishes have always delighted and won over thousands of VIPs and tourists, who have come to enjoy new tastes and flavours that cannot be found anywhere else.
There are plenty of dishes for all lovers of good food, especially those who enjoy the flavours of the sea. The first thing to try, especially if you arrive early in the morning, is the exquisite “Seadas al miele”: delicious fritters to be “devoured” whilst still warm for breakfast and, why not, as a lovely afternoon treat too.
It is an ancient recipe, handed down by local shepherds, is now a symbol of Olbia’s traditions, so much so that every year, the Agency for the Implementation of Regional Programmes awards a prize for the best recipe, reinterpreted with a modern twist.
The traditional version, as simple as it is delicious, consists of a dough made with flour, water, eggs, salt and lard, and a filling made with Sardinian pecorino cheese, lemon juice and grated orange zest. Finally, thin strips of honey and a little icing sugar are added to the top: starting the day in such a sweet and delicious way instantly puts you in a good mood.
